HEALTHY, HEARTY, ABSOLUTELY EASY LUNCHTIME SANDWICH!
I've been on quite a health kick lately, and I've been trying to up my protein intake. Today I was looking for something different for lunch and decided to whip this up real quick. This is perfect for a quick lunch but will keep you full and you can do so much with it. This is what you'll need:
2 slices of bread preferably wheat, but I didn't have any on hand so I just used white
One whole egg, or you can do 2 egg whites
A slice of swiss cheese (or any kind that you prefer)
Half of a red bell pepper cut and sliced
Mexican cheese to sprinkle over egg
Salt and Pepper to taste
What to do:
Toast the two slices of bread
While that's toasting, in a small skillet sprayed with cooking spray cook your egg or egg whites
When almost cooked through, sprinkle mexican cheese if you'd like, to melt into the egg
Place slices of pepper on one slice of bread
Put egg onto the other slice, I ended up scrambling my egg but you can cook yours however you'd like
sprinkle salt and pepper over the egg and top with swiss cheese
Put the sandwich together and there you have it!
You can also add other veggies as well, I would do maybe some sauteed onions and some fresh guacamole if I had more time. It is really up to you with this, but I loved what I had come up with and most of these items you probably already have in your house already. On the side I had a nectarine and a glass of water.

SINGLE SERVE DEEP DISH CHOCOLATE CHIP COOKIE!
We all have those nights where we just want something sweet but don't feel like whipping up a full batch of cookies and going through all of the hassel. This recipe is quick, easy and is ready in UNDER TWO MINUTES! Nothing can beat that, and to boot, this cookie's really, really good, almost cake-like.
Here's what you need:
~ 1 tbsp. butter softened
~ 1 tbsp. white sugar
~ 1 tbsp. brown sugar, packed
~ 1/4 tsp. vanilla (you may need a little more depending on what you prefer)
~ a pinch of salt
~ 1 egg yolk (be sure not to use any of the white of the egg)
~ 1/4 cup of flour
~ 2 1/2 tbsp. of chocolate chips (more or less depending on what you like)
Mix together butter, vanilla, white sugar, brown sugar, and egg yolk in a small bowl until well blended.
Add in the flour and salt, and combine well.
Add in the chocolate chips (my favorite part!)
Put dough into microwavable bowl or coffee mug and cook for about 60 seconds.
Place a toothpick in the middle and pull it out. If there is any of the DOUGH on the toothpick, cook for an additional 10 seconds and check again. You may get some of the melted chocolate chips on the toothpick, that's normal.
Serve immediately for best results, buon appetito!
This literally takes minutes to whip up and only one minute to cook and you've got your fix! Enjoy :)

FAVORITE SUMMER-TIME SNACKS!
I used to hate guacamole and the texture of it altogether. But over the past few days I've learned to actually like it, and I don't mean making myself enjoy it because it's good for me, but actually enjoying it! Above all, it's extremely creamy and tasty and has a little bit of a kick but not too much to throw you over with a mouth on fire. This little package is only 100 calories, has a great amount of fiber and fat. An it's the GOOD fat, not the bad bad!
I have always been a huge fan of hummus; hummus with pita chips, pretzels, veggies, and pita bread. So when I found these little snack packs you can bet I jumped on that bandwagon real quick. These are the perfect amount for a snack and will definitely fill you up. Hummus is also filled with tons of fiber and is absolutely delicious!

MY FAVORITE HEALTHY-JUNKY SNACK FOOD!
These chips are absolutely delicious! They are also 100 percent organic! I know, I know, organic and delicious don't sound like they should be in the same sentence together but in this case we'll let it slide. These babies have so much flavor (more than tostitos in my opinion). I used to hate tortilla chips because I found them to be bland but these ones are addicting! They're a little on the pricey side but well, well worth it! Try 'em out!
